Enzymes are complex proteins in the body that cause chemical changes. By facilitating these chemical changes in other substances enzymes provide the labor force and energy necessary to keep us alive. They are energy catalysts that are essential to the successful occurrence of over 150,000 biochemical reactions in our bodies, particularly involving food digestion and the delivery of nutrients. Enzymes help convert food into chemical substances that pass into cell membranes to perform all of our everyday life-sustaining functions. By supporting normal function, enzymes keep our immune system strong enough to fight off disease.

I am often asked questions about sugar. Which are the best? What is corn syrup? Is brown sugar better than white? In an attempt to answer these questions, I have come to the realization that knowledge is a more potent and long lasting answer to these questions. That way people can make informed decisions and choices as to what will work for them. As my clients' know, I am not a supporter of sugar in its various forms, especially not for sensitive individuals. Sugar has no food value, is quickly absorbed, can increase severe reactions, and contributes to addictions. It depletes the body of needed nutrients and shuts down the immune system. The process by which most of these sugars are produced is heat, which destroys any possible nutritional benefits i.e. vitamins and minerals. Having said that, let's look at the various sources of sugar.

Ingredients

2 cups dates (pitted)
1 cup water
1 teaspoon vanilla
2 cups flour –  gluten free baking mix
1½ cups oats
½ teaspoon baking powder
1¼ cups brown sugar (or raw cane sugar for a lighter crust)
1 cup coconut oil
add pinch of cardamon to dates
add a pinch of cinamon to crust

Ingredients:

1 1/2 cups fresh blueberries
4 tablespoons softened butter
2 eggs
2 tablespoons sugar
2 1/2 cups all purpose gluten-free flour blend
2 teaspoons GF baking powder
1/2 teaspoon baking soda
1/4 teaspoon xanthan gum OR guar gum
1/2 teaspoon vanilla Pinch of salt
1 cup buttermilk OR your favorite dairy-free substitute
2 tablespoons butter OR light olive oil

Salsa Verde Recipe

 
8-10 tomatillos, husks removed, roughly chopped
1 white onion, roughly chopped
4 cloves of garlic, peeled
handful fresh cilantro
juice of 1-2 limes
salt and pepper
olive oil
 
Toss first 3 ingredients with a little olive oil and some salt and pepper. Roast at 425 degrees for about 15-20 minutes until starting to char. Let cool and put in a food processor/blender with lime juice and cilantro. Pulse until chunky. Season with salt and pepper.

Gluten Free Barbecue Sauce Recipe

Ingredients

2 cups ketchup (high fructose corn syrup free)
1 cup Wholesome Sweeteners Molasses
1 cup Wholesome Sweeteners Organic Honey
1 ½ cups pineapple juice
1 tablespoon gluten free soy sauce
1 tablespoon onion powder
2 tablespoons garlic powder
1 teaspoon black pepper
½ teaspoon kosher salt
6 dashes Tabasco sauce
1 teaspoon 3 tablespoons (or more) pureed chipotle in adobo sauce

 

Directions

Combine all the ingredients except the chipotle in adobo puree in a large saucepan and whisk well. Bring to a boil over high heat. Once it begins to boil, reduce heat and simmer, stirring occasionally, for 30 minutes or until the sauce is thick and glossy. Whisk the sauce well; add the pureed chipotle in adobo sauce, a little at a time, until the desired amount of heat is achieved. Make sure to whisk the sauce well after each addition of chipotle.

Gluten Free Brownie Recipe

These rich and chocolaty little cakes are like a gussied up brownie. Soft and fudgy in the center, with a delightly crisp outer edge. They remind us of flourless chocolate cake.

Ingredients:

3 ounces semi-sweet Baker's chocolate
2 ounces unsweetened Baker's chocolate
1/2 cup organic expeller pressed canola oil (or coconut oil)
1 cup light brown sugar
1/2 cup hazelnut flour (or almond flour)
1/4 cup sorghum flour
1/2 teaspoon fine sea salt
1/2 teaspoon baking soda
2 organic free-range eggs, beaten
1 tablespoon good vanilla extract*
1/2 cup dark chocolate chips

Optional:
1/2 cup chopped pecans or walnuts, if desired

Instructions:

Preheat the oven to 350ºF. Line a 12-cupcake baking pan with paper liners.

Melt the chocolate in a double boiler over low heat, gently stirring. When the chocolate is melted, remove from heat and stir in the oil to combine.

Salsa Recipe

Salsa Recipe

A fresh salsa recipe, easy to make and delicious.  Chop all ingredients by hand as finely as possibly, mix together and chill in the refrigerator and serve.

Ingredients:

3 tomatoes
1/2 cup onions
5 serrano chillis
1/2 cup Cilantro
2 teaspoons lime
1 teaspoon salt
