Date Squares

Use a  8×8 pan 

2 cups dates (pitted)
1 cup water
1 teaspoon vanilla
2 cups flour –  gluten free baking mix
1½ cups oats
½ teaspoon baking powder
1¼ cups brown sugar (or raw cane sugar for a lighter crust)
1 cup coconut oil
add pinch of cardamon to dates
add a pinch of cinamon to crust

  1. Preheat oven to 375.
  2. Pit the dates and add in a pot set to medium heat. Add the water and let them break down until they’ve become a paste. Use a wooden spoon to help mash up the bigger pieces. Don’t crank up the heat, it needs time and you don’t want to singe the dates.
  3. After they’ve become a paste, about 5 minutes of cooking, remove from heat and add the vanilla.
  4. In another bowl, mix together flour, oats, baking powder and sugar.
  5. With a pastry blending tool, or a big fork, add the softened butter and mix until it all becomes incorporated together.
  6. In an 8×8 pan, add half the crust mixture. Press firmly to crate a strong base. Pour and evenly spread the dates on top.
  7. Add the remaining half of the crust mixture on top of the dates and only slightly pack down. Dusting of cinnamon on top if you desire.
  8. Bake for 25 minutes and your’re done.
Ideas to play up the recipe: *If you like spice, add a pinch of cardamom to the dates. These two ancient eastern ingredients pair together perfectly. *In the crust you can add a pinch of cinnamon for another layer of flavor.
