Salsa Verde Recipe

8-10 tomatillos, husks removed, roughly chopped
1 white onion, roughly chopped
4 cloves of garlic, peeled
handful fresh cilantro
juice of 1-2 limes
salt and pepper
olive oil
Toss first 3 ingredients with a little olive oil and some salt and pepper. Roast at 425 degrees for about 15-20 minutes until starting to char. Let cool and put in a food processor/blender with lime juice and cilantro. Pulse until chunky. Season with salt and pepper.
